Shredded Leftover Roast Beast Part 1

Here we go!  We’re going to take the shredded leftovers from the Roast Beast you cooked up the other day and turn it into quick, original, tasty and cheap dinners or lunches.

Obviously, the first thing you do with your Roast Beast when you’re done with dinner is to finish shredding it (just use 2 forks or your fingers to pull it into shreds of meat) and put it into an airtight container.  Or, if you prefer, you can put it into freezer bags (about a half pound of meat to a bag) and freeze it.

So now you’re ready to eat shredded beef leftovers.  Yeah, you could do just a leftover dinner of Roast Beast or you can get creative.  OK, so let’s get just a bit creative.  Here’s a couple of things I’ve done with shredded leftover roast beef that you might like:

Recipe: Shredded Beef and Peppers Sandwich

Summary: Here’s a tasty, simple, quick and cheap way to stretch leftover Roastbeef.

Ingredients

  • 3 cups (appx) shredded beef
  • 1 large bell pepper cut into 2 inch strips (your choice red, yellow, orange or green)
  • ¾ cup onions cut into 2” strips
  • 4 pieces flat bread or French bread rolls
  • Worcestershire sauce

Instructions

  • Chop up the bell pepper and onions into strips about 2 inches long and sauté them until soft and caramelized.
  • In another pan put a couple of cups of shredded beef in with a tablespoon of oil and a couple of good glugs of Worcestershire.
  • These 2 steps will take about 5 minutes.
  • Then layer first shredded beef and then onions and peppers on top of each other on a round of flat bread or French roll.
  • Add some lettuce and tomato if you want and enjoy.

Recipe: Shredded Leftover Beef Taco

Summary: Here’s another idea for turning leftover roastbeef into something really tasty.

Ingredients

  • 3 cups appx. Shredded beef
  • 1 cup chopped tomato
  • ½ cup chopped onion
  • ½ cup shredded cheese
  • Tortillas (corn or flour or tostadas)
  • Salsa
  • “Mexican spices”

Instructions

  • Shred up some lettuce (julienne). Chop up a tomato. Chop some onion. Get out some shredded cheese (jack and cheddar).
  • Then take a sauté pan, add a glug of oil and toss in a couple of cups of shredded beef (I like to use a well-heated pan to try to get just a bit of “crust” on the meat).
  • Now add some dark chili powder or ancho powder, cumin, garlic, a bit of salt and a bit of chipotle.
  • Remove from heat, get out some flour tortillas and build your tacos.
  • (By the way, if you use tostadas open up a can of refried beans, warm them up in the microwave and then use the back of a spoon to smear some on each tostada—it’s a great “glue” to hold the rest of the ingredients in place and adds protein).

leftover shredded roastbeef tacoYou know, these 2 leftover meals of “Shredded Leftover Roast Beast” couldn’t be simpler and quicker to make.  And they’re both pretty tasty—a great way to use leftover shredded beef in a tasty, fun and cheap way.  And–these work just as well with shredded leftover pork roast or turkey breast or chicken!

The Cheap Bastid Test:  Without getting too technical about it, each of these costs about $2 to make (excluding the meat which you paid for when you first cooked your Roast Beast).  It makes for a really inexpensive leftover dinner or lunch.

    Walt I am definately going to try these reciepes, thanks for sharing them. I have probably told you about our own favorite thing to do with leftover roast beef but I’ll tell you again….Inside-out Enchiladas! Shredded roast beef on the outside of the enchilada and cheese on the inside. When Mel makes them they are to die for.

      Ahhhhhh man, that sounds fantastic! Especially since the shredded cheese will be really gooey! And I’ve got another “post” I’ll be doing in a couple of days with a couple more leftover roast beast recipes. Plus, any of these can also be made with shredded leftover pork or turkey or chicken.
