Wieners Wellington or Hot Dogs and Crescent Rolls

Chef Gordon Ramsey judges “cheftestants” on “Hell’s Kitchen” based on how well they can execute his recipe for Beef Wellington.  Now, Cheap Bastid doesn’t have the budget for beef tenderloin and puff pastry so I’ve had to make do all these years with Wieners Wellington or Hot Dogs and Crescent Rolls.

But that’s OK.  My kids always loved them.  They could pick them up and drag them through their ketchup and snarf down as many as they wanted (subject to the limits of a tube of Crescent rolls, of course).  And, kids still love ‘em.  Even better, Carolyn and I love ‘em too.  The only down side is that Crescent rolls are at least 2 bucks a tube (store brand or Pillsbury on special).

So, it’s not the cheapest of Cheap Bastid meals—but it’s still only $3 including the wieners (that’s if you buy the cheapies on special made with pork, chicken and turkey (gaaaaaack!).  The downside of hot dogs is that the good ones (all beef) now cost at least $4 for a 1 lb. package.  For 4 bucks a pound I expect steak not wieners. The World’s Greatest Pizza–Cheap Homemade Pizza Recipe

Everybody loves pizza, right?  Here’s a cheap homemade pizza we call the “world’s greatest pizza”.  Give it a try.

You know, the best pizza we ever had was along the Fremont Street Experience in downtown Las  Vegas about 3 or 4 years ago.  Man, this pizza was terrific.  Know why?  Because it was midnight (long past our bedtime) and we were starving from a day exploring all the way to Hoover Dam and then taking in the show on Las Vegas’ incredible and fun Fremont Street—an area we found much more enjoyable than “the Strip”.

fremont street las vegasAnyway, we’d gambled just a bit and wandered up and down the street, people watching and taking in the entertainment.  Then it dawned on us that we were hungry.  Hungry?  We were ravenous. And we were hungry for something quick and easy not something in a sit down restaurant or anything like that. Continue reading

Sausage Gravy and Biscuits

Do you ever make “brinner”?  That’s a term I first came across on one of my favorite all time TV sitcoms, “Corner Gas”.  You’ve probably never heard of it but it was broadcast for 6 years on CTV (that’s Canadian TV).  Brinner is “breakfast for dinner” and when I’m feeling lazy or in the mood, I love to do eggs or pancakes or a skillet scramble or biscuits and gravy for dinner.

Well, that’s what we had last night—sausage gravy and homemade biscuits.  This is one of my all time favorites because it’s stick to your ribs good.  It’s the ultimate comfort food.

sausage gravy and biscuitsMy Mom used to make this for “special occasions” like the opening of fishing season when we’d traipse off with my Dad in search of rainbow trout.  But, rather than biscuits she’d use toast making it classic “SOS” with ground beef. Continue reading

Mamaw’s Homemade Country Biscuits

Mamaw always made her biscuits from scratch–they were homemade biscuits, not “storebought”.  When I was a boy I used to love the vacations we’d take every couple of years to my grandparents’ farm inKentucky(just about 35 miles northeast ofLexington).  Mornings started pretty early there and I would get up to help Papaw slop the hogs first thing and then watch Mamaw fix the morning breakfast before heading out to other “adventures” on the farm.

There’s something about an old fashioned farm kitchen.  Water was hand pumped out of the cistern.  The kitchen would be steamy and would smell wonderful—the early morning aromas of baking and frying.  Mamaw would bake biscuits every morning.  I remember watching her work the dough before popping the biscuits into the oven.

Loosemeat Sandwiches or Maid-Rites

Here’s a recipe for one of my favorite quick, easy and cheap meals.  It’s loosemeat sandwiches or Maid-Rites, a Midwestern favorite.

Mmaidrite posteraid-Rite is actually a small chain of restaurants in the Midwest.  The original was in Muscatine, Iowa and opened in 1929.  There are only about 70 or so of the restaurants left in a half dozen states.  Those of us who have lived in communities where you can get Maid-Rites usually swear by them as an alternative to the usual “fast food fare”.  And there are some places with Maid-Rite franchises where there are no MickyDs, BKs, Wendys or other fast food offerings.
