Chicken Fried Steak with Pan Gravy and Mashed ‘Taters

Today we’re going to talk about Chicken Fried Steak.  It’s one of the ultimate Southern style comfort foods and it’s one of my favorites to eat.  I don’t cook it very often because it’s a bit messy but sometimes the mess is worth the effort for the flavor.

The flavor is terrific and the steak is tender and tasty.  I use real steak rather than cube steak or, as some people do, hamburger.  And, with just a bit of practice you can get the breading crispy and golden while cooking your meat to the “doneness” you like—even medium rare.

Fried Fish Dinner with Swai and Summer Slaw

I recently came across a wonderful, light tasting fish perfect for a fried fish dinner and other uses.  It’s Swai and it’s reasonably priced.

Way back in the long, long ago one of my favorite things was to go out for Friday night fish-fry.  It was always 3 or 4 couples and we’d go to a place called Schartner’s On the Shore just north of Sturgeon Bay,Wisconsin.

At this part restaurant/part-tavern we would enjoy the freshest, tastiest perch in the world.  As owner Willie Schartner was fond of saying, “so fresh, it was swimming this morning.”  And it was true.  The waters of SturgeonBay and Green Bay teemed with perch.  At the time, the daily limit for sports fishermen was 100.

scharnters restaurantOh but man, could Schartner’s make some tasty perch.  The place would be packed.  Friday night fish fry is a long term tradition in Wisconsin and anyplace close to theGreat Lakes.  You’d get 2 butterflied perch, slaw and fries for $6.  Or you could get double perch for $8 or even triple perch for the princely sum of $10.  I was usually good for double perch and occasionally I’d choke down a triple. Super Fresh, Super Tasty Pico de Gallo–Fresh Homemade Salsa

Tomorrow’s the Super Bowl and this week I’ve been trying to post a few things that are tasty, easy and most of all cheap that you may wish to make for the big day.  So, today itfresh homemade salsa‘s one of my favorites–Pico de Gallo or homemade fresh salsa.

Now I don’t know what your preferences are on the “Big Day” (Super Bowl Sunday) but some people like to pay rapt attention to the actual game, others are really into the commercials and Mrs. CB likes to flip over to Animal Planet for the “Puppy Bowl”.  Whatever your preference, I’m guessing that food and snacks play a part.

You can get a jar of salsa at the grocery store for about $3 and it’s not bad.  You can get it in the deli section a bit fresher for about the same amount.  Or, you can be like me and make your own.  That way it’s absolutely fresh–and fresh tasting and about half the cost–all you have to do is invest about 10 minutes into cutting up the ingredients.  It’s just that simple. 2D’s Toots–Chili Cheese Fries for a Super Bowl Treat

With the Super Bowl this Sunday, I thought I’d post another recipe that’s a terrific dish to go along with the big game, whether you’ve got folks coming over or just want something tasty and gooey for yourself–homemade chili cheese fries!

I call it 2D’s Toots.  I named it after my daughter and one of her favorite “activities”.  Her name is Susan and long ago her brother only being 2 years older couldn’t pronounce Susan. His word was Suzu which for some reason I shortened to Toodie but have always chosen to spell “2D”.  And toots—for obvious reasons.  This dish will give a good case of them!
